The cost of preparing the classic Olivier salad with sausage (for four) amounted to 523 rubles in the second half of November 2023, based on the average price of cooking ingredients in Russian stores. Compared to the same period last year, this figure increased by 37 rubles, or 7.7%. The calculation was made according to the classic “Soviet” version of the salad with boiled sausage: 500 g of potatoes, 200 g of carrots, 5 pcs. chicken egg, 300 g boiled sausage, 100 g onion, 400 g canned green peas, 400 g pickled cucumber, 200 g mayonnaise, 30 g dill or parsley.
The most expensive item in this set was chicken eggs – the average price for 5 pieces was 91 rubles, that is, 25% higher than last year. The average cost of the required amount of carrots increased by 18% to 9 rubles, and the cost of dill or parsley increased by 11% to 31 rubles. The average price of 300 g of boiled sausage increased by 7%, reaching 112 rubles. Next come pickled cucumbers (plus 5%, 83 rubles), green peas (plus 4%, 85 rubles) and potatoes (plus 3%, 51 rubles). At the same time, the average cost of mayonnaise in Russian stores decreased by 3% to 53 rubles.
Experts of the resource note that Russians, as a rule, do not skimp on Olivier salad on the holiday table and try to choose better ingredients.
“In general, the Olivier index is noticeably lower than the annual consumer price index of fruits and vegetables, which form the basis of the salad. “Retail outlets try to keep the prices of such goods at a level acceptable to the buyer,” he commented.
The study was conducted based on analysis of 55-57 million cash register receipts obtained from more than 1.1 million online cash registers in Russia. The period considered was from November 15 to November 30, 2023 and 2022.
